Dorm Room Recipe: Chicken Fajitas

Ready to eat Chicken Fajitas on top of colored peppers

This quick and easy-to-prepare dinner packs a nutritional punch and tastes way better than any of those frozen meals you were planning on nuking. Give it a go with this 20 minute no-brainer!

total time: 20 minutes


  • microwave
  • microwave-safe casserole dish
  • microwave-safe cover
  • knife
  • cutting board


  • 1 small yellow onion
  • 1½ bell peppers
  • 2 tablespoons southwest seasoning
  • 1 tablespoon olive oil (divided)
  • 5 – 6 chicken tenders, raw


    Step 1: Thinly slice the onions and bell peppers into strips.

    Step 2: Place onions and bell peppers in the microwave-safe casserole dish. Drizzle ½ tablespoon of olive oil over the vegetables along with 1 tablespoon of southwest seasoning. Toss to coat.

    Step 3: Place the chicken tenders over the vegetables. Drizzle the remaining olive oil and sprinkle the remaining seasoning.

    Step 4: Cover and microwave on HIGH for 10 minutes. Carefully remove chicken and cut into it to ensure it is cooked through. If it appears pink in the center, microwave for another minute, repeating until fully cooked through. Enjoy with your choice of toppings like, guacamole, salsa, cilantro, or cheese. Wrap it up in a tortilla if you wish!
