Sarah Larson, Associate Teaching Professor and Undergraduate Programs Director of the Department of Nutrition at the University of Rhode Island earned her BS and MS in Nutrition and Food Science at the University of Rhode Island (URI). Following graduation, she completed her dietetic internship through Brigham and Women’s Hospital in Boston, MA. Sarah is an Associate Teaching Professor and she teaches many courses for the department, including large introductory nutrition courses to first-year students across the campus as well as upper-level courses to those pursuing degrees in nutrition and dietetics. In addition, Sarah is the Undergraduate Programs Director, which includes the Didactic Program in Dietetics. Through mentorship and planning that begins in the first year, Sarah aims to help students in the program prepare for life after URI.
